Empadada gallega  - Galicia-style pie

Fyld: Svits løgene tilsat peber i olie på panden. Fjern skindet fra sardinerne og tag indvolde og ben ud.

Kom sardinerne i løglagen, hvorefter tomaten og salt tilsættes. Lad det simre et øjeblik på panden.

Brødet: Rør gæret ud i lunkent mælk eller creme. Tilsæt vin, olie og æg. Derefter tilsættes mel, salt og sukker. Ælt dejen med en blender eller i hånden indtil den har en elastisk konsistens. Del dejen i to portioner. Rul den ene del ud med en kagerulle og fordel fyldet over. Dæk derefter over med den anden portion dej.

Pensl med æg og bag brødet i ovnen 25 min. Ved 180 grader. 

  Ingrediense

Fyld:

  • 2 dl. olie og salt

  • 3 hakkede løg

  • 4 piquillo peber fra glas eller dåse

  • 1 tomat - pillet og hakket

  • 3 ds. sardiner i olie eller 1 kg. friske sardiner

Kagedej:

  • 500 gr. mel

  • 1 1/2 dl. olie

  • 1/2 dl. fløde eller mælk

  • 2 æg, 1 pisket æg

  • 1 spiseskefuld salt, 1 spiseske- fuld sukker

  • 30 gr. gær
